Here is a quick sandwich to put together when you're hungry and wanting something filling and delicious.
You'll need the following:
-Daiya Brand Cheese
-Bread: I like Vermont Brand Bread from Whole Foods. Specifically, the Organic Soft Multigrain, 7 Whole Grain Bread. Their sliced bread is vegan. I checked with them.
-Tomato: Campari tomatoes are so delicious (cherry tomatoes work too)
-Avocado
-Veganiase or any vegan mayo type spread.
Just put it all together and cook on very low heat. Daiya cheese does take a little longer than cow based cheeses to melt. This may also cook well in a sandwich maker. The thing to remember is to press the top bread down firmly so the contents stay inside since it is a packed sandwich.
Since you most likely won't be using the whole avocado in the sandwich, you can cut the remaining portion and put some veganaise on it and eat as a side dish. Might as well since avocados don't usually last long once it's cut open.
